Goong Maenam Pao, Grilled River Prawn

Thais do eat the orange fatty bit inside the prawn's head, and that's the part that will make a big difference to your Tom Yam Goong. So, tom yam goong maenam normally tastes much better than normal tom yam goong... That precious orange bit is called Mon Goong -- direct translation as prawn's fat..

This normally is served with seafood sauce.

There's another exotic, real traditional Thai variation that serves this Goong Maenam Pao with Nam Pla Wan, sweet fish sauce, and Sa-dao, that is neem. I have never tried having it with neem ever as I've heard it's really bitter.. besides I can't recall finding a restaurant serving this dish.
